Does your local Harley Dealer have courses?  Maybe she can ride one she has her eye on in the course?

FYI, I understand the Harley courses are not recommended. Supposed to have had a couple of deaths during testing. Athough I can not confirm that.

The Harley Ride Smart Course is the MSF Basic Rider Course. They add a "meet the family"￾ module to introduce you the Harley world. MSF backs it. The courses are taught on the Buell Blast. The larger motorcycle has been posed a problem for some riders. I've observed some of the same issues they have in our classes, but a 125-250cc bike is more forgiving than the Blast in a training environment for new riders.
