CHICKEN RECIPES!!!

1/3 C vegetable oil
2 broiler-fryers cut up (about 3lbs each)
1 teaspoon leaf-oregano, crumbled
1 teaspoon salt
Paprika
1 can (3 or 4 oz) sliced mushrooms
3 Tablespoons grated parmesan cheese

preheat oven to 425
Line shallow baking pan with foil. Pour oil into pan. Place in hot oven (425) to heat, about 10 minutes. Remove pan from oven.
Place chicken pieces, skin side down, in hot oil. Sprinkle with half the oregano and salt. Sprinkle lightly with paprika.
Bake in 425 degree oven for 30 minutes. Turn chicken pieces; sprinkle with remaining oregano and salt, and paprika. Bake 15 minutes longer, remove from oven.
Spoon drippings in pan over chicken. Pour mushrooms over chicken; sprinkle with parmesan cheese, bake for 5 minutes longer.
Makes 8 servings.

1 can (8 oz.) DEL MONTE Tomato Sauce
½ cup red or white wine (optional)
8 oz. fresh mushrooms, sliced


INSTRUCTIONS

Rinse chicken with cold water and pat dry with paper towels.
Heat nonstick skillet over medium temperature about 1 minute; then spray with vegetable oil cooking spray. Add chicken and cook about 5 minutes, turning once.
Push chicken to side; add diced tomatoes, tomato sauce and wine. Stir in mushrooms.
Arrange chicken in sauce and simmer 10 to 12 minutes or until chicken is done (170°F) and sauce is thickened.

Dip chicken in butter ,lemonjuice and garlic mixture,then roll in bread crumb mixture.Roll-up chicken jellyroll style; place seam side down in a greased 11in x 7in x 2 in baking dish (casserole dish). Drizzle with any remaining butter mixture.Bake uncovered at,350 degs for 35 mins or until juices run clear.Serves 6

1 tablespoon chopped or pressed garlic
mix together

3 chicken breasts. I cut them in half so there were 6 thinner pieces.

Rub mix on each side of chicken pieces and let sit until skillet is ready.

Get skillet really hot, add some oil to the skilelt, maybe a tablespoon, and place chicken in skillet, brown on both sides.. (almost black) and then turn down heat until chicken is no longer pink.

Santa Fe skillet chicken

3 skinless boneless Chicken breast halves, cut in strips
1 tbs oil
1 onion, cut in thin wedges
1 med green or yellow pepper, cut in strips
1 can Diced tomatoes with mild green chilis

Season chicken with garlic powder, salt and pepper

Cook chicken in oil in skillet over med-high heat 3 minutes. Add onion and pepper cook 4 more minutes or until crisp-tender

Add undrained tomatoes and simmer 3 minutes or until chicken is no longer pink. Garnish with cilantro, if desired.

Arrange chicken breasts at bottom of casserole dish. Sprinkle dressing packet on top. Lay bacon across to cover all and top with cheese. Bake covered at 350 for 45 min. Remove foil and bake open for an additional 15 min.
