I have heard that standard mineral oil will burn off and coke up the turbo charger and that sythhetic is the way to go because it is more stable and protects the turbo chargers bearings. Is synthetic the way to go on turbocharged engines or is this just hype?

Synthetic is the way to go, hands down... It doesn't breakdown as quick as normal oil under extreme heat which is produced with your turbo...

Motul 300v here for me.

I wouldn't run anything but synthetic in a turbo. Resistance to heat break down is one of synthetic oils main advantages.
