Yes, u can roll an MD-80. As a marketing stunt, the test pilot rolled a Boeing 707 when it first came out! Pretty cool. Youtube link below.
I fly an Airbus which is fly by wire...no actual connection from joystick to flight control - u loose hydraulics OR elect, ur done! Has been done (DHL A300 Iraq), but I dont pretend I am close to that good of a bus driver! The fly by wire system has built in protections to not let you (airplane) go beyond certain flight parameters.
