OK, I read the manual, I read the instructions in DIY section (most pictures are missing), and still not clear.

All I want to do is to replace the fork oil.

When I unscrew the cap, is it going to pop up (it's spring loaded, right)?

After the cap is out, can I just drain oil and put the new one in, or do I need to remove a bunch of stuff using special tool, etc.

What kind of oil should I use (gear oil)? What weight?

The 98 mm oil level, is it from the top of the outer tube (assuming it's fully compressed)?

5w is stock, 7w supposedly provides better rebound adjustment. 10w supposedly can slow down fork operation. I'de replace the seals while you've got it apart. They're cheap, around $40. You'll get a good understanding of how everything works taking it down to replace them.
I got things resolved with a seal order I had and I'm still waiting on the 7w oil I ordered.
The manual may be a little confusing, but as you take the forks apart, you'll see all the info you need is there.

You can't just drain the oil and refill it either.
