Should I use that method for my first home tire change? I may not have another change for a long time.

It depends on what other tools you may have, but, if all you have are big zipties, yes, you can get the tire on with Only zipties.
And No, the zipties do not scratch or damage the wheel in any way.
Their plastic is much the same as the plastic spoon guards.

Would I be able to use the street version for my dirt bike as well?

I think it has to do with the duck head mechanism. Not real sure. It may also have to do with the way the wheel mounts to the bike. The street version has a 15mm rod that goes through the center of the wheel so I'm not sure about the dirt bike stuff.
