In a previous post Blanca mentioned "Cuban Pork", well, that caught my ear. Turns out a pig is seasoned with Mojo and roasted in a box with the coals above.
Blanca offered to mail me some roasted pork from the next time his family had "Cuban pork". I declined, but I took him up on his offer to send me the Mojo marinade used to season the pork, as a chef that's of much more interest to me than just the pork.
I martinated the ribs over night in the mojo and BBQed them using the rotisserie. I also smoked them with cherry wood.

Ribs trimmed, silver skin removed from back side and shallow slits allowing the marinade to penetrate.
Ribs in freezer bags with respective marinades.
In fridge, overnight.
ready to start cooking.
