Tire Replacement

Hello Riders,
Sorry no post lately but I have been running hard in Northern New England.
Well I have everything I need to replace my tires down to tire machine , balancer, and weights.
What I need is the right choice, for sub-standard pavement, with all the gas you ever want to give it.
Going for Michelin Pilot HPX's. Good Choice?
Question will taking the size out to 200 from 190 be a problem?
On stock 2003 GSX 1300 RK3 rims.
Front will be changed to matching 120 also?

Turn in will be slower. If your running through the twisties I wouldn't do it.
