Hi G-Bots, great looking bike! Mine has a similar c-scheme. I would just ride her for a while as is, regarding the pegs. I too found them a little bit "high" but they are there for ground clearance as well as the "classic" tuck position when the headwind is around 200mph!
I got used to the pegs but did put HELI bars on which brought them a little higher and closer. Couldn't be happier for my frame.
