Yessir all of the plastic is in place as it should be. To answer your question about the engine bolt. I have frame sliders that attach utilizing that bolt and to remove the body work I have to remove that bolt. Same as the opposite side. The dual fan setup is definitely on the to-do list.

So given the same info, should I be concerned that the valve cover gasket looks that way?

At the Victoria track you have a 1/2 mile to slow down and make the turn. Since its the airport the turn is wide and long and you could probably make the turn doing 100mph. Wouldn't suggest doing that though. Plenty of enough time for most bikes to slow down.
