Cow heel soup

Thought I'd share a soup recipe since I was at it...the essentials

Split peas in pressure cooker add a bundle of chopped shado beni & 1 head peeled garlic, add a bit of salt, bring water to boil first then cover pressure cooker & pressure cook for about 15 mins...don't burn...better less cooked than burned

Put the cow heel in a pot while the split peas is cooking & boil the cow pen out of it for about half hour

After half hour of boiling the cow pen out of the cow heel throw away water & wash the cow heel...now it's ready to pressure cook

Add the other head of garlic & some more shado beni & a bit of salt to cow heel prior to pressure cooking...cow heel is stiff & you would want to pressure cook it till it gets soft according to your likeness...I like mine really soft with the bits of white fat swirling around in the soup

Add rest of stuff to the split peas in the soup pot...I like to chop the pumpkin in odd sizes so that some pieces will melt away & some remain little chunks

Today I'm only adding potatoes...some sweet corn cob chopped is really nice...so is carrots & well whatever else you fancy...& lite flour dumplings are nice too but I don't like dumplings

The must have for that rich creole flavour...it's salted butter...it would never be the same without it

After the salt butter dissolves add salt to taste if needed...your veggies should be almost finished cooking in the soup pot
