Who's Still Eating Leftovers?

I am really starting to see how cheap I really am... Tonight was the first meal not completely made up of leftover Thanksgiving, my gut just couldn't take it.

So

I made omlettes with the Ham and olives

I have enough turkey left for one more sandwich, just finished the last of a pie tonight.

I have had enough turkey for a long time.

I already ran out,(thank God) so today I treated myself to crab legs in garlic butter sauce. Only bad part is that I have to cook tomorrow to have something to eat in the refrigerator, since I don’t like eating out all the time. I need my rice, beans and sweet plantains. LOL!

Yep but I bought some salmon and pork chops to have every other day until the turkey runs out. Bought a 23 pounder for four adults and one grand child so the kids took home most of it but at that weight, with all the usual trimmings, I'll have turkey for another couple days at least.

I have been taking care of parents and my 95 year old Aunt and I just didn't have it this year. I usually fry 4-5 turkeys (give all but 1 away.) This year I decided to cheat and cook this:

Sounds like crap but it was actually excellent and couldn't be easier. Eating a Turkey sandwich right now!

Omar and I did the smart thing and didn't cook a thing - we grabbed a table for two out

Once my leftovers mature to a fine age I cook them into new dishes, like a turkey/pasta/green chile casserole.

We made the leftover turkey to turkey pasta. Sauteed it with garlic, white onion and mixed with black olives, herbs, fresh parsley and parmesan.
