Power Commander

I have just had a complete D&D pipe system put on my 2007 Busa. The technician stated that I did not need a power commander that he would do the remap by using a probe to sniff the exhaust for fuel and air. Can someone confirm if this is right? Others have told me that I need a power commander. Could someone explain to me what exactly a power commander does?
Which way is the best way to remap the bike?
