Multicopters don't move very fast, so it won't work on your bike unless you are riding 10-20 mh.

You can build a very fast quad, but it won't be giving you stable footage, and even then it will still typically be in the 60-70 mph range and will do that for a short period of time.

Most multicopters with camera and gimbal will fly for 4-12 minutes. As you get into the longer flight times, they tend to be larger and carry heavier batteries, with slower spinning propellers.
