shank end roasted ham
sliced thin cheddar cheese and ham
toast butter hot mustard
bread cheese under broiler
heat ham with Montreal steak spice butter and a little water
add sauerkraut
finish with light sauce reduction made from pan dripping from ham roasting.

It's actually a OK quality, local Canadian old cheddar, gets a solid 6 outa 10. Not like I used American, plastic wrapped, processed, sorta like cheese "food" slices.
it was on sale. (food costs LOL)
It was all I had in the fridge. I made it up on the fly. I'm more impressed by a chef who can create awesome dishes from the leftovers in the walk in. Anybody can spend a fortune from a specialty supplier. LOL

That looks awesome! First it has ham, so how could it not be? Second it has ham gravy (we call that red-eye gravy, I make that with a bit of brandy) Not sure what kind of ham that is but Virginia Country ham has the sort of sour taste that comes from salt curing in a smoke shack. That would go very well with the sauerkraut, never put those 2 together. Thanks for sharing, sort of!
