Horsepower and weight = MPH. Figure out how fast you're going to go and the diameter of your rear tire and pic a gear that will put you at the top of 5th at that MPH. The last thing you want to do is shift right before the finish line or cross it bouncing off the limiter.

It is going to depend on your setup, and how well you can tune the clutch. Generally I add gearing to decrease the 60' until I start dealing with power wheelies and back off a tooth. I have 17 and 18 front sprockets, and 43 through 48 rear.
