So I just filled it up a few hundred miles ago and now its starting to drop down to the low line again...anyone know why this is doing that?

You probably have a leak down at the slave cylinder

S/B easy, I did the Strom, piece of cake.

Yes, just remove the left side panel...then the slave cylinder. R+R the seal
and clean up the area, lube the rod...re install the slave cylinder, then top
off the master and bleed the system.
