That's waaaaaaay more complicated than is necessary.....

Yeah, the plastic wrap and tin foil were on for the first heating, but it was STEAMED in the baking pan, on the stove, to set the meat with out shrinkage. The interior was heated to 160f so as not to over cook it the first time.

awww ok, now I got it.. was wondering why the rack in the pan, now it makes sense..
 
Probably never fly as "health food", but it suuure looks tasty!:thumbsup:
I need to get a meat grinder, one of the few utensils I don't have yet.
