How much faster is the gen 2 than the gen 1 from 0 to 60?

nil....any gen 1 rider worth his weight could outrun a gen 2 0-60.

But seriously...you're talking about a bike that already has a 2.6 sec 0-60.... Even faster if a sprocket change or power add-ons has been done.

Between the two Gens 0-60 is all rider. You won't see the difference until pass 1/8 of a mile with the same rider, same conditions on his max effort. Gadson ran stock 600s into the 9s 4 years ago.

I don't think 0-60mph times are all that telling when it comes to bike performance. For cars maybe but with a bike the rider can make or break the times and also depends on the environment.
