No Thermostat

I am no expert, but engines are designed to run at consistent and engineered temps.
And considering your location in the winter its probably best to keep it in or change it with one that suits your needs.

There is no reason to run without a thermostat.
If it is hot out and the motor is hot, the thermostat will open up all the way, and even if there is no thermostat, the engine will not be cooled any better.
If however the engine is not up to operating temp. there will be increased wear associated with runnning it at a lower temp.
They were made for a reason, so my suggestion is to leave it in.

It is made to run a thermostat, alot of times it will run hotter with out one because the water just free flows with out it and it does not have time to stop in the motor and get up to temp so that the water that is in the radiator can cool back down before it goes back in to the motor.
 
As the other .oRg brothers have indicated, not a good idea! Your fuel/air mix benefits from cooler temps, you get a denser carge. However, the engine is designed to get big performance out of a small package and to do that the engine needs to maintain it's prescribed operating temp.

At this temperature:
  • The combustion chamber is hot enough to completely vaporize the fuel, providing better combustion and reducing emissions.
  • The oil used to lubricate the engine has a lower viscosity (it is thinner), so the engine parts move more freely and the engine wastes less power moving its own components around.
  • Metal parts wear less.
